This is a great Mother's Day Brunch item that kids will eat too. Substitute the Kale with Spinach or savory cabbage. It is also great for a party. This cheesy dish has a great source of calcium.

My passion for food began when I finally learned what it can do for my body when I'm eating the right foods. I attended the Institute for Integrative Nutrition last year, which totally changed my life and attitude toward food. Basically, I believe that "I am what I eat" so I'd better make the right choices.
