Red Wine Vinegar (1/2 cup)
Olive Oil (2/3 cup)
Set your oven to high broil
Place spinach in a bowl
In a bowl, mix together your 1/2 cup of red wine vinegar and your 2/3 cup of olive oil. Add a little salt and pepper and whisk together.
Drizzle dressing over the mushroom and place the mushrooms in the oven for about 10 minutes.
Then, place your quinoa on the stove, add two cups of water to the whole grain and bring it to a boil. Then place the lid on it and let it sit for about 15 minutes or until moisture is absorbed.
When the mushrooms are done, take them out and add them to your spinach.
Drizzle the remaining dressing on the salad.
Add the quinoa to the salad and mix it all together.
