3/4 lb. whole boned chicken breast
3/4 cup grated Monteray Jack
3/4 cup grated Cheddar
1/2 t pepper
2 T minced parsley leaves
1/4 t tarragon
5 T butter
4 sheets phyllo
Flatten chicken until 1/4" thick
Combine cheeses, etc. and 2 T butter forming 2 3" oval patties.
Arrange on chicken scallop and roll up scallops, tucking in sides to enclose filling
Brush phyllo dough with melted butter and top with another sheet.
Arrange chicken roll in center of a short side.
Roll up, tucking in sides.
Put package in baking dish and brush with butter.
Bake at 350 basting with pan juices for 40 min.
